Arugula with Figs, Peaches, Goat Cheese Crumbles and (GF) Granola
My stepdaughter, Amelia, and sister-in-law Meg get credit for this terrific salad. Amelia wanted to make a salad with fruit for dinner one night. She mixed together peppery arugula with sweet peaches, figs, and tangy goat cheese. Meg suggested adding my crunchy gluten free homemade granola as the topping. The combination is dyn-o-mite and I’ve been making Arugula with Figs, Peaches, Goat Cheese Crumbles and (GF)Granola ever since! As the seasons change, so do my fruit choices.

I love the peppery taste of arugula combined with fruit. It’s a great pairing. For this salad, use organic arugula (if possible!), sliced fresh figs and peaches, thinly sliced red onion (I love onion in all of my salads but if you don’t, omit it), and a sprinkling of goat cheese* and a handful of store-bought or homemade gluten free granola.
*About the cheese: I used goat cheese here but have also substituted feta and blue cheese at times. Each cheese adds its unique flavor to the salad.
Arugula with Figs, Peaches, Goat Cheese Crumbles and (GF) Granola
Combine all of the ingredients together on a large platter or in a large bowl. Then dress the salad.* Lastly, sprinkle granola on top.
*About the dressing: I use flavored strawberry vinegar (just love the stuff!) and lemon oil for this salad because it amps up the fruit-flavor significantly. If you don’t have strawberry vinegar, other fruit-flavored vinegars can easily be substituted. If you don’t have flavored vinegar and oil in your pantry, no worries, just use my classic balsamic vinaigrette.
Arugula with Figs, Peaches, Goat Cheese Crumbles and (GF) Granola
Ingredients
- 1/2 bag arugula washed and dried; organic, if possible
- 1-3 fresh figs, any variety halved or quartered; the sweetest figs are very soft
- 1 peach or nectarine (make sure it's ripe) skin can stay on or be removed. then slice into wedges
- 1-2 tablespoons goat cheese, crumbled feta or blue can also be used
- red onion thinly sliced
- handful of gluten free granola (or toasted nuts) recipe link in NOTES section below
Dressing
- Strawberry Vinegar and Lemon Olive Oil even parts
- Season with kosher salt, freshly ground pepper and garlic powder to taste
Instructions
- Place arugula in a big bowl or plate separately.
- Add sliced figs and peaches, crumbled cheese and thinly sliced onion.
- Drizzle dressing on top.
- Season with kosher salt, freshly ground pepper and garlic powder
- Sprinkle a handful of homemade (GF) granola or toasted nuts to complete the salad.
