Toasting the Pine Nuts

Toast pine nuts in a small pan over medium heat for approximately 3 minutes until nuts are lightly toasted. Alternatively, toast the nuts in the oven at 350 degrees for 3-5 mins.

Place yogurt in a small bowl. Then add the figs, drizzle on the honey, and sprinkle with pine nuts. To complete the bowl, add a sprig of fresh mint and a few grinds of freshly ground black pepper.

Ingredients

  • 1/2 cup yogurt plain, greek or whatever is your favorite
  • 2 fresh figs rinsed, top stems removed and cut in half (if very large, quarter them)
  • 2 teaspoons honey your favorite kind, use more or less based on sweetness preference
  • 1 1/2 teaspoons pine nuts toasted approx 3 mins
  • Sprig of mint as garnish use a few extra leaves and tear on top of yogurt
  • Few grinds of freshly ground pepper

Instructions

  • Toast pine nuts in a small pan over medium heat for approximately 3 minutes until nuts are lightly toasted. Alternatively, toast the nuts in the oven at 350 degrees for 3-5 mins.
  • Place yogurt in a small bowl. Then add the figs, drizzle on the honey, and sprinkle with pine nuts. To complete the bowl, add a sprig of fresh mint and a few grinds of freshly ground black pepper.

Notes

If you’re not a fig lover, substitute in your favorite fruit(s).
The freshly ground black pepper and mint really add some oomph to each spoonful of yogurt.
If making this recipe for more than one person, try serving family style and let everyone make his/her own yogurt bowls.
