Fresh Mozzarella with Roasted Peppers and Olives

Once I have Homemade Roasted Peppers in the house, I use them in many different dishes. For this salad recipe, I combine them with Fresh Mozzarella and Kalamata Olives for a simple and very tasty Italian salad. It has the creaminess of the mozzarella, with the saltiness of the olives and the richness of the peppers tied together with a slightly tangy balsamic syrup drizzle.

I make a quick extra virgin olive oil marinade consisting of kosher salt, pepper and minced garlic. This marinade provides a flavor booster to the Roasted Peppers and Fresh Mozzarella.

Sometimes I slice or cube the Fresh Mozzarella and other times I pull it apart as I have done in the photo above.

Combine the Roasted Peppers with the Fresh Mozzarella and add Kalamata Olives (or your favorite olives). Season with salt and pepper. Garnish with cilantro (and/or basil) and drizzle with Balsamic syrup.

Ingredients

Marinade

  • 2 Tbsps. Olive Oil extra virgin
  • 1/2 Tsp. Kosher Salt
  • 1/4 Tsp. Pepper freshly ground
  • 1 Garlic Clove minced

Salad

  • 1/2 Fresh Mozzarella Ball marinated and sliced, cubed or pulled apart
  • 1/2 Cup Homemade Roasted Peppers
  • 1/4 Cup Kalamata Olives pitted and some of them halved
  • Kosher Salt and Pepper
  • Balsamic Syrup bottled (check label to make sure your brand is gluten free)
  • Cilantro or Basil chopped as garnish

Instructions

Marinade

  • Mix all ingredients together.
  • Add Mozzarella to the marinade.  

Salad

  • Place all ingredients (Fresh Mozzarella, Roasted Peppers and Kalamata Olives) on a platter.

  • Season with Salt and Pepper.
  • Drizzle with Balsamic Syrup and garnish with Cilantro and/or Basil.

Notes

This salad is best served at room temperature.
Balsamic syrup can be found at Trader Joe’s, Costco, and many local markets.
There are endless variations that are possible with this recipe such as:
  • Use your favorite olives, cheese and herbs.
  • Instead of, or in addition to, olives, use capers and/or anchovies (including white ones).
  • Add Arugula or onions.
