Arugula with Figs, Peaches, Goat Cheese Crumbles and (GF) Granola

Ingredients

  • 1/2 bag arugula washed and dried; organic, if possible
  • 1-3 fresh figs, any variety halved or quartered; the sweetest figs are very soft
  • 1 peach or nectarine (make sure it's ripe) skin can stay on or be removed. then slice into wedges
  • 1-2 tablespoons goat cheese, crumbled feta or blue can also be used
  • red onion thinly sliced
  • handful of gluten free granola (or toasted nuts) recipe link in NOTES section below

Dressing

  • Strawberry Vinegar and Lemon Olive Oil even parts
  • Season with kosher salt, freshly ground pepper and garlic powder to taste

Instructions

  • Place arugula in a big bowl or plate separately.
  • Add sliced figs and peaches, crumbled cheese and thinly sliced onion.
  • Drizzle dressing on top.
  • Season with kosher salt, freshly ground pepper and garlic powder
  • Sprinkle a handful of homemade (GF) granola or toasted nuts to complete the salad.

Notes

Any fruit can be substituted for the figs and peaches. Use what’s in season or whatever is your favorite.
Grilling the fruit (especially if it isn't as sweet as you'd like it to be) is also a fun way to go.
Use your favorite cheese. I used Trader Joe's Goat Cheese with Honey.
Keep cheese refrigerated until ready to use to make it easier to crumble.
Other fruit-flavored vinegars can be substituted for the strawberry vinegar.
If you don’t have flavored vinegars and oils on hand, use my Classic Balsamic Vinaigrette. It goes perfectly with this salad too.
Homemade Gluten Free Granola  If you’re not gluten free, use your favorite brand of granola.
Toasted nuts are a good substitution for the granola.
