My stepdaughter, Amelia, and sister-in-law Meg get credit for this terrific salad. Amelia wanted to make a salad with fruit for dinner one night. She mixed together peppery arugula with sweet peaches, berries, and tangy goat cheese. Meg suggested adding my crunchy gluten free homemade granola as the topping. The combination is dyn-o-mite and I’ve been making Arugula with Figs, Peaches, Goat Cheese Crumbles and (GF) Granola ever since! As the seasons change, so do my fruit choices.
