Homemade Brazilian Mini Cheese Rolls (Gluten Free)

You can buy the frozen Brazi Bites at the market which are really good OR you can make Homemade Brazilian Mini Cheese Rolls which are even better! These mini cheese rolls are crusty on the outside, warm and cheesy on the inside AND naturally gluten free. It’s a homerun!

Ingredients

Organize the ingredients – whole milk, egg, olive oil, tapioca flour, salt, shredded fresh mozzarella and grated parmesan.

Blending the Batter

Place the milk, oil and egg into the blender for 15-20 seconds, until ingredients are combined. Next, add the flour and salt and blend for another 20 seconds. Lastly, add the parmesan and mozzarella and blend until just combined, only 5-10 seconds.

Baking the Mini Rolls

Spray the mini muffin pan(s) and pour batter into each cup, filling nearly to the top. Place tray on the middle rack of the oven and cook for 20 minutes, until rolls are golden brown and crusty on the outside.

Ingredients

  • 3/4 cup whole milk
  • 1/3 cup vegetable or olive oil I used olive oil
  • 1 egg large
  • 1 1/3 cups tapioca flour
  • 1/2 teaspoon kosher salt
  • 1/3 cup parmesan cheese grated
  • 2/3 cup mozzarella cheese fresh, hand grated (not pre-shredded)

Instructions

  • Preheat oven to 400 degrees.
  • Place the milk, oil and egg into the blender for 15-20 seconds, until ingredients are combined.
  • Next, add the flour and salt and blend for another 20 seconds.
  • Lastly, add the parmesan and mozzarella and blend until just combined, only 5-10 seconds.
  • Spray the mini muffin pan(s) and pour batter into each cup, filling nearly to the top.
  • Place tray on the middle rack of the oven and cook for 20 minutes, until rolls are golden brown and crusty on the outside.
  • Serve rolls in a basket or bowl.

Notes

Try adding fresh herbs or jalapeños to the batter.
Substitute other cheeses that melt easily to experiment…fontina, cheddar, etc.
