Homemade Brazilian Mini Cheese Rolls

Ingredients

whole milk

vegetable or olive oil

tapioca flour

kosher salt

parmesan cheese
grated
2/3
cup
mozzarella cheese
fresh, hand grated (not pre-shredded)
Instructions
Preheat oven to 400 degrees.
Place the milk, oil and egg into the blender for 15-20 seconds, until ingredients are combined.
Next, add the flour and salt and blend for another 20 seconds.
Lastly, add the parmesan and mozzarella and blend until just combined, only 5-10 seconds.
Spray the mini muffin pan(s) and pour batter into each cup, filling nearly to the top.
Place tray on the middle rack of the oven and cook for 20 minutes, until rolls are golden brown and crusty on the outside.
Serve rolls in a basket or bowl.
Notes
Try adding fresh herbs or jalapeƱos to the batter.
Substitute other cheeses that melt easily to experiment...fontina, cheddar, etc.
