Cilantro Lime Rice with Crispy Garlic Chips

It doesn’t take much to turn ho-hum white rice into a side dish worthy of discussion. Cilantro Lime Rice with Crispy Garlic Chips starts with lots of freshness… lime zest, lime juice, and fresh cilantro…and culminates with the perfect finisher of crispy garlic chips. Don’t skimp on the garlic chips. You’ll regret it if you do!

Ingredients

Making the Crispy Garlic Chips

Add olive oil to a small non-stick pan over medium-low heat. Once oil is heated, add the garlic slices in a single layer. Cook for 4-5 mins, turning the garlic slices over once the slices have browned on one side. If it’s too tedious to turn each slice over, simplify and use a fork or tongs to mix the slices. Once browned on both sides, remove pan from the heat and let rest.

Cooking the Rice and Final Assembly

Cook rice according to package instructions. Use a fork to fluff the rice and then add the butter, lime zest, lime juice, sugar, and most of the cilantro. Use a spoon, fork or spatula to thoroughly combine ingredients making sure the butter is fully melted. Then add 3/4 of garlic chips, season with kosher salt, and gently mix again.

Ingredients

  • 1 cup white rice jasmine or basmati, rinsed in a strainer until water runs clear
  • 1-2 tablespoon butter unsalted (or olive oil)
  • 1 lime zested and juiced
  • 1 teaspoon sugar granulated
  • 1 cup cilantro leaves and tender stems rough chopped
  • 5 garlic cloves sliced thinly
  • 1/2 tablespoon olive oil
  • 1/4 teaspoon kosher salt to season

Instructions

  • Cook rice according to package instructions.
  • While rice is cooking, prep remaining recipe ingredients. Chop the cilantro and zest and juice the lime. Then make the crispy garlic chips.

Notes

Basil could be substituted for the cilantro.
Rice can take on a lot of seasoning so if 1/4 teaspoon of salt isn’t enough, add more. Same goes for the butter, cilantro and lime zest/juice.
