Gluten Free Pain Au Chocolat
Oh my gosh, these are damn delicious! Pain au Chocolat—also known as chocolate croissant here in America—is one of those pastries you’d never think could be this easy to make gluten free. But with high-quality chocolate and Dufour gluten-free puff pastry, you’re well on your way to flaky, buttery, chocolate-filled perfection. And the best part? In less than an hour, you’ll be biting into a warm, flaky, chocolate-filled Gluten Free Pain Au Chocolat that tastes straight out of a Parisian bakery.

Organize the ingredients – There’s only three of them! Dufour gluten free pastry, egg, semi-sweet chocolate bars.
Making the Egg Wash

Combine one egg with one tablespoon of water and mix together to make the egg wash.
Rolling Out the Pastry


Defrost gluten free puff pastry following box instructions. Remove pastry from the box and unfold it. The unfolded size will be aprroximately 9″ x 7″. Use a rolling pin to gently roll the pastry to approximately 11″ x 11″ square. This is an important step because the dough sheet as it is out of the package is too thick to bake properly. Preheat oven to 400 degrees.
Rolling the Pastry with the Chocolate Bars






Using a pizza cutter or knife, cut pastry into approximately three 3.5” vertical pieces (see photo above). If using Guittard chocolate as I did, there are 3 bars in a package of which we will be using 2 of the bars. Each bar breaks into 12 individual pieces and each pain au chocolate needs 8 chocolate pieces. Stack 2 pieces of chocolate side-by-side on each pastry sheet, 4 bars total initially. Then roll the pastry up-and-around the chocolate bars and repeat with another 2 stacked bars side-by-side and roll up the pastry until almost at the top. Then apply the egg wash to the last part of the pastry (see above photo) and complete the last bit of rolling. Transfer pastry to the lined baking sheet seam-side-down and then apply the egg wash to the top of the pastry.
Baking the Pain Au Chocolat

Transfer baking sheet to the oven and cook for 30 minutes, rotating the tray after 15 minutes.
Gluten Free Pain Au Chocolat

Let pastry cool for 10 minutes (this is the most difficult part…the waiting!!). Oui Oui!

- 1 package chocolate baking bars semi sweet, I used Guittard which I buy at Whole Foods
- 1 egg large
- 1 tablespoon water
- 1 box frozen GF puff pastry I use Dufour brand (so delicious!), which I also buy at Whole Foods
Instructions
