Golden Summer Carpaccio

Golden Summer Carpaccio is a beauty…has the vibe of a Van Gogh sunflower! Just thinly slice the mango, avocado, and figs (to the best of your ability 😉) to create the “carpaccio” effect. There’s no cooking involved with this recipe which is typical for a carpaccio dish. And the “sunflower” tastes as delicious as it looks!

Thinly Slicing the Fruit

Thinly slice the mango, avocado and figs by hand. The slices don’t need to be perfect or uniform, just do the best you can!

Assembling the Dish

Arrange mango slices on the outside perimeter of a platter. Next add avocado slices below and slightly overlapping the mango. Then, in the center, layer in the sliced figs in the middle.

Drizzle olive oil and balsamic glaze over the fruit. Season with kosher salt and freshly cracked black pepper. Top with fried shallots and almonds for some crunch. Finish with some fresh herbs, if desired, and serve!

Ingredients

  • 1 ripe mango sliced thinly
  • 1 ripe avocado sliced thinly
  • 3-4 ripe fresh figs top stems removed, sliced thinly (I used black figs)
  • 1 tablespoon whole almonds I used dry roasted and salted, chopped finely
  • 1/4 cup fried shallots (also known as crispy shallots) Trader Joe’s or homemade, optional (See NOTES below)
  • Balsamic glaze blaze or syrup, all of these names are the same product
  • Extra Virgin Olive Oil
  • Kosher salt a healthy pinch
  • Cracked black pepper a few grinds
  • Leaves from fresh herbs such as basil cilantro, or tarragon, optional

Instructions

  • Arrange mango slices on the outside perimeter of a platter.

Notes

Thinly sliced peaches could be substituted for the mango, if you’re not a mango fan.
For variety, other nuts can be used such as pine nuts, pistachios, macadamia nuts and/or hazelnuts.
If using the Trader Joe’s Fried Shallots, the bag does not state the product is Gluten Free but these did not hurt my stomach. As an alternative, here is the GFchow recipe for homemade crispy shallots.
