Balsamic Sun Dried Tomato Chicken
This sauce is so good, you want to eat it by the spoonful (actually, I did)…but, do your best to try to wait until you’ve grilled the chicken and then slather the sauce on. Balsamic Sun Dried Tomato Chicken is really fantastic – a little bit sweet, salty, and tangy, and filled with herbaceous goodness. The sauce is a no-cook gem for when you’re short on time but still want something delicious for dinner!

Organize the ingredients – thinly sliced boneless, skinless chicken breasts, sun dried tomatoes in oil, kalamata olives, extra virgin olive oil, balsamic vinegar, garlic, parsley, basil, scallions, lemon zest, smoked paprika, hot pepper flakes and kosher salt.
Grilling the Chicken
Drizzle olive oil on chicken and season with kosher salt and freshly ground pepper. Preheat grill to medium high heat. Spray with oil once grill is heated. Place chicken on grill and cook for 1 minute and then turn 1/4 rotation to make grill marks. Cook for another minute. Cooking time for one side is approximately 2 minutes. Then flip chicken and cook for another 2 or so minutes. Total cooking time approximately 4 minutes. Remember, the cooking time is quick because we are working with thin chicken cutlets.
Making the Balsamic Sun Dried Tomato Sauce
Place olive oil, balsamic vinegar, sun dried tomatoes, olives, garlic, parsley, basil, scallions, lemon zest, smoked paprika, hot pepper flakes and kosher salt in a medium sized bowl. Combine ingredients. Taste and adjust seasoning if needed. Set aside while grilling chicken.

Transfer chicken to a platter and slather on big spoonfuls of the balsamic sun dried tomato sauce. I served my Balsamic Sun Dried Tomato Chicken with mashed potatoes but you can serve it with whatever side you’re in the mood for.
Balsamic Sun Dried Tomato Chicken
Ingredients
- 1 lb boneless, skinless chicken breast thinly sliced
- extra virgin oil kosher salt and freshly ground black pepper to season chicken for grilling.
Balsamic Sun Dried Tomato Sauce
- 1/2 cup extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1/4 cup sun dried tomatoes packed in oil rough chopped
- 1/4 cup pitted kalamata olives rough chopped
- 1 teaspoon garlic minced
- 1/4 cup parsley tender leaves only, chopped
- 1/4 cup basil leaves only, chopped
- 1 tablespoon scallions sliced into rounds
- 1/2 lemon zested
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon hot pepper flakes more if you like it spice
- 1/2 teaspoon kosher salt
