Balsamic Sun Dried Tomato Chicken

Ingredients

  • 1 lb boneless, skinless chicken breast thinly sliced
  • extra virgin oil kosher salt and freshly ground black pepper to season chicken for grilling.

Balsamic Sun Dried Tomato Sauce

  • 1/2 cup extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 cup sun dried tomatoes packed in oil rough chopped
  • 1/4 cup pitted kalamata olives rough chopped
  • 1 teaspoon garlic minced
  • 1/4 cup parsley tender leaves only, chopped
  • 1/4 cup basil leaves only, chopped
  • 1 tablespoon scallions sliced into rounds
  • 1/2 lemon zested
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon hot pepper flakes more if you like it spice
  • 1/2 teaspoon kosher salt

Instructions

Balsamic Sun Dried Tomato Sauce

  • Combine olive oil, balsamic vinegar, sun dried tomatoes, olives, garlic, parsley, basil, scallions, lemon zest, smoked paprika, hot pepper flakes and kosher salt in a medium sized bowl. Taste and adjust seasoning if needed. Set aside while grilling chicken

Chicken Preparation

  • Drizzle olive oil on chicken and season with kosher salt and freshly ground pepper.
  • Preheat grill to medium high heat. Spray with oil once grill is heated.
  • Place chicken on grill and cook for 1 minute and then turn 1/4 rotation to make grill marks. Cook for another minute. Cooking time for one side is approximately 2 minutes. Then flip chicken and cook for another 2 or so minutes. Total cooking time approximately 4 minutes. Remember, the cooking time is quick because we are working with thin chicken cutlets.

Assembly

  • Transfer chicken to a platter and slather on big spoonfuls of the balsamic sun dried tomato sauce. I served my Balsamic Sun Dried Tomato Chicken with mashed potatoes but you can serve it with whatever side you're in the mood for.

Notes

You can also bake or sauté the chicken.
If you prefer thicker breasts, you will need to increase the cooking time to approximately 8-10 minutes total. Use this timing as a guide.
Make the sauce your own…add more or less of any ingredient.
The sauce would also be great on salmon, white fish such as tilapia and halibut, or just on its own as a dipping sauce.
