Radishes with Anchovy Butter

Radishes, butter, and coarse salt.  It’s an iconic and sophisticated french combination of flavors that is very addictive. In this recipe, the butter is melted with olive oil (to reduce the richness a bit) and enhanced with umami-rich anchovies, which takes simple to stupendous! Radishes with Anchovy Butter is a simple recipe that bursts with flavor.

Radish Preparation

The radishes pictured above are from my garden. If you don’t grow radishes, they’re readily available at the market. Buy any type of radishes. Trim them by cutting off the stems and roots. (Sometimes I leave the roots intact. They are edible!). Using a damp paper towel, remove any dirt from the radishes. Then cut them in half or quarters depending on their size.

Anchovy Butter

Butter, olive oil, anchovies, and salt are the ingredients for anchovy.

Heat butter and olive oil in a large pan. Once butter is almost melted add the anchovies.

When anchovies begin to dissolve, add the radishes to the pan. Cook radishes (stirring occasionally) for 5 minutes, until fork-tender and soft. Season with kosher salt.

Transfer to a serving bowl or platter and garnish with parsley or your favorite herb.

Ingredients

  • 3 anchovy fillets
  • 2 tablespoons butter unsalted
  • 2 tablespoons olive oil
  • 1/4 teaspoon kosher salt
  • 20-25 radishes washed and dried with stems and roots removed (almost 2 cups when chopped)
  • Sprig of parsley for garnish if desired.

Instructions

  • Cut radishes in half or quarters depending on their size.
  • Heat a large pan on medium-high heat and add olive oil and butter. Once butter is nearly melted, add the anchovies.
  • Once anchovies begin to dissolve, add the radishes to the pan.
  • Cook radishes (stirring occasionally) for 5 minutes, until fork-tender and soft. Season with kosher salt.
  • Transfer to a serving bowl or platter and garnish with parsley or your favorite herb.

Notes

Add other sliced or chopped vegetables to this dish.  Anchovy butter tastes great on all veggies!
The amount of butter can be adjusted (slightly) if watching your calories.
Goat or Feta cheese and/or toasted crushed nuts can be crumbled on top.
Many larger markets and Trader Joe’s sell radishes that are already trimmed and packaged.
