Halloumi Toast (Gluten Free) with Grapefruit Marmalade

Halloumi cheese wasn’t on my radar until recently. But once it was, it became an addiction. Cooking the Halloumi brings out the complexity of the cheese- the salty, savory and tangy flavors. Pair warm Halloumi with a sweet and slightly-tart grapefruit marmalade on toast, and you have created the perfect Mediterranean breakfast (or snack)…Halloumi Toast (Gluten Free) with Grapefruit Marmalade.

Organize all of the ingredients necessary for this recipe: Udi’s bread (or Trader Joe’s gf crackers if you want to avoid bread), marmalade, Halloumi cheese and grapefruit.

Cut Halloumi cheese into approximate 1/4″ slices. (See photo above.)

Cooking the Halloumi Slices

Heat a small pan. No oil is necessary. Once pan is heated, add cheese slices. Cook until browned, approximately 1 1/2-2 minutes and then turn cheese slices and cook for an additional 1 minute until both sides are browned.

While cheese is cooking, toast bread(if using) to desired doneness. Spread marmalade onto the toast (or cracker) and cut each piece of toast in half. Place one Halloumi slice onto each piece of toast.

Transfer to a plate or platter, garnish with grapefruit slices and serve immediately while nice and hot.

Ingredients

  • 2 pieces gluten free bread, toasted (or Trader Joe's crackers, see NOTE below) I use Udi's
  • 4 slices Halloumi cheese approx 1/4” thick
  • 1-1 1/2 Tablespoons grapefruit marmalade or your favorite marmalade, jam, preserves or jelly
  • pink (or white) grapefruit slices as garnish, optional

Instructions

  • Heat a small pan over medium high heat.
  • Once heated, place Halloumi slices into the pan.
  • Cook for 1 1/2-2 minutes, until bottom side is browned. Then turn cheese slices and cook for another 1 minute until browned. (Depending on the the heat of your burners the cheese may take more or less time to cook. The goal is for the cheese to be browned on both sides.)
  • While cheese is cooking, toast the bread.
  • Spread marmalade onto the toast.
  • Cut bread slices in half.
  • Place a piece of warm Halloumi on each piece of toast.
  • Garnish with sliced grapefruit if desired. Serve immediately.

Notes

If possible, eat the Halloumi Toast while nice and hot.
If you can’t find Halloumi at your market, substitute a grilling cheese.
Trader Joe’s gluten free Norwegian Crackers are a good substitute for gluten free bread.
If you’re not gluten free use whatever is your favorite crusty bread or cracker.
I keep bread in the freezer and defrost a few pieces as needed.  This keeps the bread as fresh as possible.
