Easy Deviled Eggs

Making the Perfect Hard-Boiled Eggs

Gently place eggs in a pot and cover with cold tap water. Bring to a boil, then simmer for 12 minutes. Let rest for 5 minutes and rinse with cold water for 1-2 minutes, until eggs are cool enough to peel.

Peel Eggs and Cut in Half Vertically

Once cool, peel the eggs under cold water and make sure to remove all pieces of shell. Cut each egg in half vertically.

Separate Yolks from Whites, Mash Yolks and Mix into a Paste

Separate yolks from the whites as shown above and mash yolks with a fork. Add the mayonnaise, dijon mustard, salt and pepper and mix together thoroughly into a paste.

Easy Deviled Eggs

Carefully and gently add yolk paste to the whites. Eat them plain or garnish as desired. I garnished with caviar and chives but there are many toppings you could use…bacon pieces, jalapenos, scallions, roe, capers, paprika, etc!

Ingredients

  • 6 large Eggs
  • 1-2 tablespoons mayonnaise more if not using mustard and to taste
  • 1 teaspoon dijon mustard optional
  • kosher salt and pepper to taste

Instructions

Hard Boiled Eggs

  • Gently place eggs in a single layer in a pot of cold tap water, enough to cover the eggs.
  • Bring water to a boil and then turn down flame to a simmer.
  • Simmer for 12 minutes.
  • Then remove the pan from the burner and let sit for an additional five minutes.
  • Next, spill out the hot water and run cold water over the eggs for 1-2 minutes to cool them down.
  • Peel eggs or store them in the refrigerator in a bowl or baggie until ready to use.

Deviled Eggs

  • Once the eggs are peeled, cut each egg in half vertically.
  • Separate yolks from the whites.
  • Mash the yolks with a fork.
  • Add mayonnaise, mustard, salt and pepper to the yolks.
  • Mix into a paste.
  • Carefully take a teaspoon and place a scoop of the yolk paste into the egg white.
  • Garnish if desired.

Notes

Brown or white large eggs can be used.
Sometimes eggs can be difficult to peel. The fresher the egg, the harder it is to peel.
Deviled Eggs are also a great breakfast or snack.
The garnish options are many…capers, scallions, chives, paprika, bacon pieces, caviar, etc. 
Deviled Eggs are just as good served plain.
