Gluten Free Pumpkin Pancake Mix

This is a seasonal item carried on Trader Joe’s shelves in the fall. I usually buy 2-3 boxes at one time because they sell out quickly.

Pour batter into the pan in medium sized circles

Mix up the ingredients per the recipe on the box (or see the recipe below). Heat some oil and a pat of butter in the pan. Once hot and sizzling, pour the batter in making six or so pancakes at one time. Once you see some air holes form, the pancakes are ready to be flipped.

Flip them and cook for another minute or so until the underside is browned

Add banana slices and syrup. If you are looking for a tasty syrup, Trader Joe’s has a new one out that is delicious…Vanilla Bean infused Vermont Maple Syrup. My all-time favorite syrup though is Bourbon Barrel Aged Syrup…also from Trader Joe’s in the fall.

Ingredients

  • 1 egg large
  • 2 Tbsp melted butter or oil
  • 1/2 cup plus 2 Tbsp water
  • 1 cup Trader Joe’s Gluten Free Pumpkin Pancake Mix

Instructions

  • Whisk egg and melted butter (or oil) in a bowl. Then whisk in water.
  • Next add the pancake mix and stir until combined. Do not over mix. Batter will be slightly lumpy.
  • Add 1 Tbsp (or less) of oil and a pat of butter to the pan. Heat on medium high until bubbly.
  • Ladle batter into the pan. Between an 1/8-1/4 cup for each pancake.
  • Cook until air holes/bubbles develop and then flip. The pancake edges should have a nice, visible crispness to them.
  • Cook for 1-2 more minutes on the other side.
  • Serve plain or with fruit of your choice and add maple syrup.

Notes

Try one of Trader Joe’s maple syrups.  The Vanilla Bean Infused syrup is so good and so is the Bourbon Barrel Aged syrup.
