Ingredients
6large Eggs
1-2tablespoonsmayonnaisemore if not using mustard and to taste
1teaspoondijon mustardoptional
kosher salt and pepper to taste
Instructions
Hard Boiled Eggs
Gently place eggs in a single layer in a pot of cold tap water, enough to cover the eggs.
Bring water to a boil and then turn down flame to a simmer.
Simmer for 12 minutes.
Then remove the pan from the burner and let sit for an additional five minutes.
Next, spill out the hot water and run cold water over the eggs for 1-2 minutes to cool them down.
Peel eggs or store them in the refrigerator in a bowl or baggie until ready to use.
Deviled Eggs
Once the eggs are peeled, cut each egg in half vertically.
Separate yolks from the whites.
Mash the yolks with a fork.
Add mayonnaise, mustard, salt and pepper to the yolks.
Mix into a paste.
Carefully take a teaspoon and place a scoop of the yolk paste into the egg white.
Garnish if desired.
Notes
Brown or white large eggs can be used.Sometimes eggs can be difficult to peel. The fresher the egg, the harder it is to peel.Deviled Eggs are also a great breakfast or snack.The garnish options are many...capers, scallions, chives, paprika, bacon pieces, caviar, etc. Deviled Eggs are just as good served plain.
