I grew up having bagel and lox family Sunday brunches most of my life. So when I started following a gluten free diet, I really felt like I was missing out. Sitting around the table, everyone would talk about how delicious and fresh their bagel was and compare this week’s bagels to last week’s (no exaggeration!). Luckily, Trader Joe’s has gluten free bagels that when toasted properly totally do the trick. I can’t partake in all of the bagel banter but at least I can enjoy my Gluten Free Bagels and Lox!

Trader Joe’s Gluten Free Bagel

Trader Joe’s has two types of gluten free bagels – plain and everything. I like the everything bagel best. When toasted, these bagels get a nice crusty outside and soft yet airy inside. Gluten free bagels must be toasted!

Fixins’ for GFchow Bagel and Lox

Slice some cucumber, tomato, pepper, and onion. Get out the cream cheese (your favorite brand), cheese (your favorite type) and a few pieces of lox (either from the jewish deli, pre-packaged from the market or use leftover GFchow Citrus Dill Gravlax.

Assemble as desired and dig-in to one heck-of-a satisfying sandwich!

Ingredients

  • 1 Gluten Free Bagel (Trader Joe's) halved vertically and toasted to perfection
  • 2-3 slices of lox
  • 2 tablespoons cream cheese more or less to taste
  • 1-2 thin slices of cheese I prefer thinly sliced Swiss
  • 2-3 tomato slices cut thin
  • 1 slice onion red or white, sliced thin
  • 1 small cucumber peeled and sliced
  • 2-3 slices pepper your favorite color

Instructions

  • Toast bagel halves.
  • Let cool before applying cream cheese to one or both bagel halves (otherwise the cream cheese will melt and slide off).
  • Add the lox, cheese, tomato and onion slices and cover with other 1/2 of bagel.
  • Serve with cucs and peppers.

Notes

Add capers to amp up your bagel.
Butter, honey mustard or flavored cream cheese can be substituted for the plain cream cheese.
Instead of gluten free bagels this sandwich would also be delicious on toasted gluten free bread or rice cakes.
If you don’t follow a gluten free diet, indulge and substitute your favorite bagel.
