1Gluten Free Bagel (Trader Joe's)halved vertically and toasted to perfection
2-3slicesof lox
2tablespoonscream cheesemore or less to taste
1-2thin slices of cheeseI prefer thinly sliced Swiss
2-3 tomato slicescut thin
1sliceonionred or white, sliced thin
1small cucumberpeeled and sliced
2-3slicespepperyour favorite color
Instructions
Toast bagel halves.
Let cool before applying cream cheese to one or both bagel halves (otherwise the cream cheese will melt and slide off).
Add the lox, cheese, tomato and onion slices and cover with other 1/2 of bagel.
Serve with cucs and peppers.
Notes
Add capers to amp up your bagel.Butter, honey mustard or flavored cream cheese can be substituted for the plain cream cheese.Instead of gluten free bagels this sandwich would also be delicious on toasted gluten free bread or rice cakes.If you don't follow a gluten free diet, indulge and substitute your favorite bagel.
