Honey-Glazed Sweet Potato Wedges
Honey-Glazed Sweet Potato Wedges take sweet potatoes to another level. Slice them into wedges and roast with olive oil to make them crispy on the outside and creamy, smooth on the inside. Then drizzle honey for the last ten minutes of roasting to create a wonderful candied-coating that makes these sweet potato wedges totally irresistible!

Cut sweet potatoes into wedges and place on a lined baking sheet. Drizzle olive oil and salt onto sweet potatoes and mix to coat using your hands or tongs.
Once sweet potatoes are roasted, brush them with honey and cook for an additional 10 minutes, until wedges begin to brown in spots.

Arrange sweet potatoes on a platter and garnish with chopped parsley (or your favorite herb) if desired.
HONEY-GLAZED SWEET POTATO WEDGES
Ingredients
- 2 sweet potatoes or yams similar size, if possible
- 1-2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 cup honey any kind and more, if needed
- flat-leaf parsley chopped for garnish
Instructions
- Preheat oven to 400°F on Roast setting (otherwise on Bake).
- Wash sweet potatoes with a damp paper towel and let air dry.
- Cut each potato in half vertically and then cut each half into thirds or quarters depending on the size of the sweet potatoes.
- Place sweet potato slices/wedges on a baking sheet lined with either foil or parchment paper.
- Drizzle olive oil and salt onto sweet potatoes and toss to coat.
- Arrange wedges in a single layer and roast for 35-40 minutes.
- Then brush with honey and continue cooking until beginning to brown in spots, about 10 minutes longer.
- Transfer to platter; sprinkle with parsley and serve.
