HONEY-GLAZED SWEET POTATO WEDGES

Ingredients

  • 2 sweet potatoes or yams similar size, if possible
  • 1-2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 cup honey any kind and more, if needed
  • flat-leaf parsley chopped for garnish

Instructions

  • Preheat oven to 400°F on Roast setting (otherwise on Bake).
  • Wash sweet potatoes with a damp paper towel and let air dry.
  • Cut each potato in half vertically and then cut each half into thirds or quarters depending on the size of the sweet potatoes.
  • Place sweet potato slices/wedges on a baking sheet lined with either foil or parchment paper.
  • Drizzle olive oil and salt onto sweet potatoes and toss to coat.
  • Arrange wedges in a single layer and roast for 35-40 minutes.
  • Then brush with honey and continue cooking until beginning to brown in spots, about 10 minutes longer.
  • Transfer to platter; sprinkle with parsley and serve.

Notes

Use more or less salt and honey to taste.
