Ingredients

sweet potatoes or yams
similar size, if possible
1-2
tablespoons
olive oil
1/2
teaspoon
kosher salt
1/4
cup
honey
any kind and more, if needed
flat-leaf parsley
chopped for garnish
Instructions
Preheat oven to 400°F on Roast setting (otherwise on Bake).
Wash sweet potatoes with a damp paper towel and let air dry.
Cut each potato in half vertically and then cut each half into thirds or quarters depending on the size of the sweet potatoes.
Place sweet potato slices/wedges on a baking sheet lined with either foil or parchment paper.
Drizzle olive oil and salt onto sweet potatoes and toss to coat.
Arrange wedges in a single layer and roast for 35-40 minutes.
Then brush with honey and continue cooking until beginning to brown in spots, about 10 minutes longer.
Transfer to platter; sprinkle with parsley and serve.
Notes
Use more or less salt and honey to taste.
