Roasted Zucchini Parmesan Fries

Roasted Zucchini Parmesan Fries are a family favorite.  Zucchini is the main star in this side dish but the garlic, olive oil and parmesan are strong supporting ingredients.  It’s nice to know that with less than five ingredients, you can create a mouth-watering side dish that will be a box office sensation.

Zucchini Frie Preparation

Zucchini cut into wedges

Wash the zucchini, trim the ends and then cut each one in half, lengthwise. Cut each half into long wedges. Then cut your wedges in half horizontally to create “frie-size” sticks as shown above.

Place zucchini on foil or a parchment-lined baking sheet. Sprinkle on the minced garlic, kosher salt and pepper. Drizzle olive oil and then grated parmesan cheese over the wedges. Mix zucchini with your hands or tongs to make sure the wedges are thoroughly covered.

Bake at 425 degrees for 20 minutes, until zucchini gets browned on the edges.

Ingredients

  • 2 large zucchini or 3 medium size
  • 2 cloves garlic minced
  • 1-2 tablespoons olive oil
  • 1/3 cup parmesan grated
  • kosher salt and ground pepper to taste

Instructions

  • Preheat oven to 425 degrees on the Roast setting. (If you don't have a roast setting use the bake setting.)
  • Wash and dry the zucchini.
  • Trim the top and bottom ends.
  • Cut zucchini in half lenghtwise.
  • Cut each half into wedges.
  • Cut each wedge in half horizontally to make “fries.”
  • Place the wedges, cut-side up in a singe layer on a parchment or foil lined baking sheet.
  • Sprinkle on the minced garlic, kosher salt and pepper. Drizzle olive oil and then grated parmesan cheese over the wedges. Mix the "fries" with your hands or tongs to make sure the wedges are thoroughly covered with the seasonings.
  • Roast 20 minutes or until lightly browned and tender when pierced with a fork.
  • Transfer to a platter and serve.

Notes

This side dish is a kid-favorite in my house.
Add more parmesan, if desired.
These “fries” would be delicious with an aioli dipping sauce.
