Gluten Free Tortizza Party

What started out as a potential recipe for gluten free cheesy garlic bread blossomed into what I’m now calling Tortizzas. Actually Bruce (my husband) gets co-developer credits for this one! Thanks Brucey. Tortizzas are great for a quick snack, lunch, appetizer or light dinner! Less than 10 minutes of prep and 5 minutes of cooking and you’ll be digging into some tasty tortilla pizzas. Ingredients

White Tortizza Assembly

Place first tortilla on a flat surface and scatter 2 heaping tablespoons of shredded mozzarella cheese and 2 teaspoons grated parmesan cheese on the tortilla. (Photo 1) Then place the second tortilla on top. Lightly brush olive oil on the second tortilla. (Photo 2) Next step is to scatter the remaining 2 heaping tablespoons of shredded mozzarella cheese and 2 teaspoons grated parmesan cheese on top of the oil. (Photo 3) If you’d like to add a topping as I did, now is the time. (Photo 4) For my version, I added onion and anchovy. Such a great combination! Finish off your Tortizza with seasonings such as oregano and hot pepper flakes, if desired.

Red Tortizza Assembly

Place first tortilla on a flat surface and scatter 2 heaping tablespoons of shredded mozzarella cheese and 2 teaspoons grated parmesan cheese on the tortilla. (Photo 1) Then place the second tortilla on top. (Photo 2) Spoon approximately 2 tablespoons of pizza sauce on the second tortilla. (Photo 3) Scatter the remaining 2 heaping tablespoons of shredded mozzarella cheese and 2 teaspoons grated parmesan cheese on top of the sauce. (Photo 4) Finish off your Tortizza with toppings and seasonings such as oregano and hot pepper flakes, if desired.

Air Frying the Tortizzas

Preheat air fryer to 400 degrees. Carefully place the Tortizza on the parchment-lined air fryer tray or basket. Cook tortilla for 5 minutes. If you don’t have an air fryer, use the convection bake setting on your oven at the same temperature and cook for 5 minutes. If you don’t have Convection Baking functionality on your oven, I would cook the Tortizzas at 425 degrees for 5 minutes or until cheese is golden.

Ingredients

  • 2 tortillas gluten free

White Pie

  • 1/4 cup heaping shredded mozzarella divided
  • 4 teaspoons parmesan grated, divided
  • 2 teaspoons extra virgin olive oil
  • 2 anchovy fillets cut into pieces, if using
  • 2 tablespoons white or red onion rough diced or thinly sliced into rounds and then halved, if using
  • 1/2 teaspoon oregano optional
  • 1/4 teaspoon hot pepper flakes optional

Red Pie

  • 1/4 cup heaping shredded mozzarella divided
  • 4 teaspoons parmesan grated, divided
  • 2 tablespoons prepared jar pizza sauce
  • 1/2 teaspoon oregano optional
  • 1/4 teaspoon hot pepper flakes optional

Instructions

  • Preheat air fryer to 400 degrees. See NOTES section below for other cooking options.
  • Place first tortilla on a flat surface and scatter 2 heaping tablespoons of shredded mozzarella cheese and 2 teaspoons grated parmesan cheese on the tortilla.
  • Then place the second tortilla on top.
  • If making a white pie, lightly brush olive oil on the second tortilla.
    If making a red pie, omit the olive oil and instead spoon approximately 2 tablespoons of pizza sauce on the second tortilla.
    Whether you are making a red or white Tortizza, the next step is to scatter the remaining 2 heaping tablespoons of shredded mozzarella cheese and 2 teaspoons grated parmesan cheese on top of the oil or sauce.
  • If you’d like to add a topping as I did on the white version of my Tortizza, now is the time. For my version, I added onion and anchovy. Such a great combination!
  • Lastly, season your Tortizza with oregano and hot pepper flakes, if desired. Carefully place the Tortizza on the parchment-lined air fryer tray or basket.
  • Cook tortilla for 5 minutes.
  • Cut tortillas into quarters and let the party begin!

Notes

If you don’t have an air fryer, use the convection bake setting on your oven at the same temperature and cook for 5 minutes. If you don’t have Convection Baking functionality on your oven, I would cook the Tortizzas at 425 degrees for 5 minutes or until cheese is golden.
The topping combinations are endless as with regular pizzas.
Try this recipe with regular, non-gluten free tortillas.
It might be counter intuitive but do NOT place olive oil or sauce on the first tortilla. It will make the bottom of the tortilla soggy rather than crispy.
