Roasted Cauliflower with Dates and Pine Nuts
Even for Cauliflower naysayers, Roasted Cauliflower with Dates and Pine Nuts is always such a hit. It has a touch of sweetness combined with savory and nutty flavors that’s quite addictive. Not only is this cauliflower recipe delicious, it’s easy to make and leaves little to clean up. That’s my kind of dish!

Cut cauliflower head in half vertically through the core and then cut into florets.
Roasting the Cauliflower
Evenly spread the cauliflower in a roasting dish or on a lined baking sheet. Toss with olive oil and season with salt and pepper. Transfer to a 425-degree oven and roast for 20 minutes until golden brown at the edges, giving the florets a quick toss after 10 minutes or so.
Flavor Boosters
Organize and prep flavor boosters – dates with pits removed and then chopped, minced garlic, cold butter cut into pieces, and pine nuts.

Remove cauliflower from the oven and combine with the dates, pine nuts, garlic, and butter. Return cauliflower to the oven and continue cooking for another 5-7 minutes until pine nuts are browned and fragrant.

Roasted Cauliflower With Dates and Pine Nuts
Ingredients
- 1 head of cauliflower core removed, and cut into florets of similar size
- 2 tablespoon olive oil
- Kosher salt and pepper
- 1/4 cup pine nuts
- 4 Medjool Dates pits removed, chopped
- 2 small garlic cloves minced
- 2 tablespoons cold butter cut into pieces (use less butter if watching calories or perhaps add a tablespoon of coconut oil instead of butter)
Instructions
- Preheat the oven to 425 degrees on Roast setting. If your oven doesn't have Roast, use Bake setting.
- Evenly spread the cauliflower in a roasting dish or on a lined baking sheet. Toss with olive oil and season with salt and pepper. Transfer to the oven and roast for 20 minutes until golden brown at the edges, tossing after 10 minutes or so.
- Remove cauliflower from the oven and combine with the dates, pinenuts, garlic, and butter. Return cauliflower to the oven and continue cooking for another 5-7 minutes until pinenuts are browned and fragrant.
- Transfer to a serving platter or bowl.
