Roasted Cauliflower With Dates and Pine Nuts

Ingredients

  • 1 head of cauliflower core removed, and cut into florets of similar size
  • 2 tablespoon olive oil
  • Kosher salt and pepper
  • 1/4 cup pine nuts
  • 4 Medjool Dates pits removed, chopped
  • 2 small garlic cloves minced
  • 2 tablespoons cold butter cut into pieces (use less butter if watching calories or perhaps add a tablespoon of coconut oil instead of butter)

Instructions

  • Preheat the oven to 425 degrees on Roast setting. If your oven doesn't have Roast, use Bake setting.
  • Evenly spread the cauliflower in a roasting dish or on a lined baking sheet. Toss with olive oil and season with salt and pepper. Transfer to the oven and roast for 20 minutes until golden brown at the edges, tossing after 10 minutes or so.
  • Remove cauliflower from the oven and combine with the dates, pinenuts, garlic, and butter. Return cauliflower to the oven and continue cooking for another 5-7 minutes until pinenuts are browned and fragrant.
  • Transfer to a serving platter or bowl.

Notes

Either purple or green cauliflower can be used instead of, or in addition to, the traditional white cauliflower.
Experiment using other nuts such as pistachios, almonds, hazelnuts, etc. Just remember if using larger nuts, the cooking time may need to be increased by a few minutes.
Raisins or apricots can be substituted for the dates.
This recipe can easily be halved or doubled.
