Miso-Glazed Chilean Sea Bass (Gluten Free)
Simply stated, Miso-Glazed Chilean Sea Bass is outstanding! It’s a restaurant-quality dish that’s not only mouth-wateringly delicious but is super-easy to make and sure to impress. It’s layered with umami flavor and each fillet has a wonderful candied glaze on top. You don’t have to dine at a fancy restaurant to enjoy this gem of a recipe.

As I stated, “EASY.” The ingredients are Chilean sea bass, gluten free soy sauce, miso paste, mirin, sake, and brown sugar. The dish is garnished with scallions/chives and sesame seeds.
Miso Marinade
Combine the miso marinade ingredients in a shallow bowl or baking dish. Then add Chilean sea bass fillets to the marinade and fully coat. Cover with plastic wrap and marinate for at least 2 and up to 6 hours in the refrigerator.
Cooking the Chilean Sea Bass
Remove fillets from the marinade (but don’t throw away marinade!) and place them on a baking sheet or broiler pan lined with either foil or parchment. Broil fish for 6-7 minutes, until fish is opaque and caramelized on top.
Converting Miso Marinade into a Sauce
While fish is cooking, pour the remaining marinade into a small sauce pan and bring to a boil. Now you can use the marinade as a delicious sauce for the fish.

Transfer fillets to individual plates or a platter. Sprinkle with green onions, sesame seeds, and serve.
MISO-GLAZED CHILEAN SEA BASS (GLUTEN FREE)
Ingredients
- 1/3 cup sake can be purchased at most liquor stores
- 1/3 cup mirin*
- 1/3 cup light yellow or white miso* I use Shirakiku Organic, Gluten Free Miso
- 3 tablespoons dark brown sugar packed
- 2 tablespoons gluten free soy sauce I use San-J
- 4 6-ounce Chilean Sea Bass fillets each about 3/4 inch thick
- 2 tablespoons green onions(scallions or chives) chopped, optional
- 2 teaspoons black and/or white sesame seeds optional
Instructions
- Mix first 5 ingredients (sake, mirin, miso, brown sugar, and soy sauce) in shallow bowl or baking dish. Add fish and turn to coat. Cover and refrigerate at least 2 and up to 6 hours, if possible.
- Preheat broiler.
- Remove fish from marinade (but don't throw away marinade!) and place on a rimmed baking sheet lined with foil and spray with non-stick cooking oil. With broiler door slightly open, broil fish approx. 6 inches from heat source until just opaque in center and caramelized on top, about 6-7 minutes, depending on thickness of the fish fillets.
- While fish is cooking, pour the remaining marinade into a small sauce pan and bring to a boil. Now you can use the marinade as a delicious sauce for the fish!
- Once fish is cooked, transfer fillets to individual plates or a platter. Sprinkle with green onions, black sesame seeds, and serve.
