Grilled Turkey Burgers with Sriracha Mayo

Grilled Turkey Burgers with Sriracha Mayo

Many turkey burgers are dry and tasteless, but not these babies! Here are a few tips for making the best Grilled Turkey Burgers with Sriracha Mayo. First and foremost, use ground dark meat turkey. Next, add olive oil and cumin seeds (along with other seasonings) to the burgers. Finally, top with Sriracha Mayo and either serve on a toasted gluten free bun or eat them naked.

Making Turkey Burgers

Add ground turkey, onion, garlic, olive oil, cumin seed, kosher salt, pepper, and a pinch of cayenne into a bowl and using your hands, mix until combined. Do not over mix.

Divide mixture into four equal parts and using your hands form patties. Make them as thin as you can because they will plump-up when cooking on the grill. Cover with plastic wrap and refrigerate until ready to grill.

Pre-heat the grill to medium-high. Once grill is pre-heated, spray with oil. Place burgers on the grill and cover. Cook for approximately 5-6 minutes or until bottom side is browned and then flip the burgers and cook for additional 3-5 minutes; 8-11 minutes total.

Sriracha Mayo

For the Sriracha Mayo, mix the mayo with the sriracha and add a squeeze of lemon.

Sauteed Onions

For Sautéed Onions, add olive oil to a small pan and heat on medium-high. Once heated, add the onions. Cook onions for approximately 10 minutes mixing occasionally, until browned. Season with salt, pepper, and paprika. Transfer sautéed onions to a bowl or place them directly on the burgers as I have done in the photo below.

If you want to add cheese to your burgers, do it once they are almost finished cooking. Place turkey burgers on a platter and serve with the sautéed onions and sriracha mayo, if desired. Or place burgers on a grilled gluten free bun and add your favorite toppings. Some suggestions are mentioned in the Notes section in the recipe below.

Ingredients

  • 1 lb. ground turkey preferably all dark meat or a combination of white and dark meat
  • 1/4 white onion diced
  • 1 garlic clove minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon cumin seed If you can't find cumin seed, use ground cumin
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground pepper
  • pinch cayenne
  • cheese slices your favorite cheese, if desired
  • avocado sliced
  • 4 buns (Gluten Free) I currently use Trader Joes brand
  • dill pickles (pairs perfectly with Turkey Burgers)

Sriracha Mayo

  • 4 tablespoons mayo
  • 2 teaspoons sriracha
  • squeeze of lemon

Sauteed Onions

  • 1/2 white or red onion diced or sliced
  • 1 tablespoon olive oil
  • kosher salt and ground pepper to taste
  • paprika to taste (optional)

Instructions

Grilled Turkey Burgers

  • Using your hands mix ground turkey and remaining ingredients together until combined. Do not over mix.
  • Divide mixture into four equal parts and using your hands make thin patties. The burgers will plump up as they cook.
  • Put the patties on a plate or platter, cover with plastic wrap and refrigerate until ready to grill.
  • Preheat grill to medium-high. (If your grill runs hot, preheat to medium.)
  • Spray the grill with non-stick vegetable spray and carefully place each burger onto the grill.
  • Cook for approximately 5-6 minutes or until bottom side is browned and then flip the burgers.
  • Cook for another 3-5 minutes or until bottom side is also browned and burgers are firm to the touch of a spatula.
  • If adding cheese, (as I did on one burger) add it once burgers are almost fully cooked.
  • Remove from grill and place on a plate, platter, or grilled gluten free bun.

Sriracha Mayo

  • Mix sriracha, mayo, and lemon together. Set aside.

Sauteed Onions

  • Add oil to a small pan. Heat on medium high. Once heated, add onions and cook until browned, stirring occasionally (approx. 10 minutes).
  • Season with salt, pepper and paprika and serve in a separate bowl or put directly on the burgers.

Notes

White meat ground turkey can be very dry.  It’s best to buy dark meat.  The next best is to buy a combination of white and dark. Sometimes it can be tricky to know if the pre-packaged ground turkey is white or dark meat.  If the packaging doesn’t specifically say white meat only or dark meat only, then it is a combination of white and dark meats.
Turkey is very lean which is why it needs to have some fat added back in to be tasty. The “fat” in this case is the olive oil.
The key to success with these burgers is to make sure they are cooked but not overcooked…so follow my timing guidelines!  Overcooking them will leave you with a dry, tasteless burger!
I use Trader Joes brand gluten free buns. If you can find better gluten free buns, please let me know.
If you’re not gluten free, use your favorite bun.
Additional toppings to consider:  sliced or mashed avocado, sliced tomato, lettuce, sauteed mushrooms, bacon, ketchup, relish, etc.
Serve with homemade Dill Pickles. Homemade Dill Pickles…Easy as 1,2,3
