1lb.ground turkeypreferably all dark meat or a combination of white and dark meat
1/4white oniondiced

dill pickles(pairs perfectly with Turkey Burgers)
Sriracha Mayo
4tablespoonsmayo
2teaspoonssriracha
squeeze of lemon
Sauteed Onions
1/2white or red oniondiced or sliced
1tablespoonolive oil
kosher salt and ground pepper to taste
paprikato taste (optional)
Instructions
Grilled Turkey Burgers
Using your hands mix ground turkey and remaining ingredients together until combined. Do not over mix.
Divide mixture into four equal parts and using your hands make thin patties. The burgers will plump up as they cook.
Put the patties on a plate or platter, cover with plastic wrap and refrigerate until ready to grill.
Preheat grill to medium-high. (If your grill runs hot, preheat to medium.)
Spray the grill with non-stick vegetable spray and carefully place each burger onto the grill.
Cook for approximately 5-6 minutes or until bottom side is browned and then flip the burgers.
Cook for another 3-5 minutes or until bottom side is also browned and burgers are firm to the touch of a spatula.
If adding cheese, (as I did on one burger) add it once burgers are almost fully cooked.
Remove from grill and place on a plate, platter, or grilled gluten free bun.
Sriracha Mayo
Mix sriracha, mayo, and lemon together. Set aside.
Sauteed Onions
Add oil to a small pan. Heat on medium high. Once heated, add onions and cook until browned, stirring occasionally (approx. 10 minutes).
Season with salt, pepper and paprika and serve in a separate bowl or put directly on the burgers.
Notes
White meat ground turkey can be very dry. It's best to buy dark meat. The next best is to buy a combination of white and dark. Sometimes it can be tricky to know if the pre-packaged ground turkey is white or dark meat. If the packaging doesn't specifically say white meat only or dark meat only, then it is a combination of white and dark meats.Turkey is very lean which is why it needs to have some fat added back in to be tasty. The “fat” in this case is the olive oil.The key to success with these burgers is to make sure they are cooked but not overcooked...so follow my timing guidelines! Overcooking them will leave you with a dry, tasteless burger!I use Trader Joes brand gluten free buns. If you can find better gluten free buns, please let me know.If you’re not gluten free, use your favorite bun.Additional toppings to consider: sliced or mashed avocado, sliced tomato, lettuce, sauteed mushrooms, bacon, ketchup, relish, etc. Serve with homemade Dill Pickles.
