Grilled Corned Beef Specials – Gluten Free
Growing up I loved corned beef specials on rye bread, especially grilled ones. Oh, the memories — sooo good and sooo messy! Just because I can’t eat rye bread anymore, doesn’t mean I can’t enjoy a grilled corned beef special. With this recipe, you and I can have our delicious, messy Grilled Corned Beef Specials Gluten Free, just without the bread… and nothing is lost in the taste department!

I buy lean corned beef at the delicatessen and ask them to slice it thin. If you like yours with a little more fat as my grandfather did, go for it.
Assembly
Divide corned beef into even piles; somewhat separating the slices so it’s not so packed down. Then spoon some homemade GFchow Thousand Island Dressing.
Next is cole slaw.
The last ingredient is the cheese! I like swiss cheese and that’s what is traditionally used in a corned beef special.
Grilling the Corned Beef Specials
Carefully take each “sandwich” and place it in the heated pan.
For quicker cooking, place a lid on the pan.
Heat “sandwiches” for approximately 5 minutes or until cheese is melted and edges of the corned beef are crispy.

Serve with potato chips, extra dressing and kosher dill pickles. (The pickles in the photo above are my homemade dill pickles – click here for the recipe)

Ingredients
- 1 lb lean Corned Beef sliced thin from a deli
- 1/4 lb. Cole Slaw (small container)
- 1/2 cup Thousand Island Dressing. See Notes below for link to GFchow Homemade Thousand Island Dressing
- 1/4 lb. Swiss Cheese sliced thin (prepackaged is fine too) or use your favorite cheese
- 1 – 2 tablespoons oil such as Canola or Vegetable
- 1/2 tablespoons butter (margarine can be substituted)

- Potato Chips
Instructions
- Divide corned beef into 4 piles, approx 1/4 lb each (see photo above).
- Add 1-2 tablespoons of GFchow's thousand Island dressing to each pile. GF Chow Thousand Island recipe at https://gfchow.com/2019/02/26/thousand-island-dressing/
- Place 1-2 tablespoons of cole slaw on top of the dressing.
- Finish the "sandwich" with 1-2 pieces of swiss cheese.
- Heat a large pan with oil and butter (or margarine) over medium-high heat.
- Once oil is heated, carefully add each corned beef pile to the pan. To quicken the melting of the cheese, cover pan with a lid.
- Cook for approx. 5 mins undisturbed; until cheese is melted and corned beef has crisped at the edges.
- Use a spatula to transfer each "sandwich" to a plate.
- Serve with pickles and potato chips and dig in!
