Growing up I loved corned beef specials on rye bread, especially grilled ones. Oh, the memories — sooo good and sooo messy! Just because I can’t eat rye bread anymore, doesn’t mean I can’t enjoy a grilled corned beef special. With this recipe, you and I can have our delicious, messy Grilled Corned Beef Specials Gluten Free, just without the bread… and nothing is lost in the taste department!

Ingredients

ingredients for a corned beef special

I buy lean corned beef at the delicatessen and ask them to slice it thin. If you like yours with a little more fat as my grandfather did, go for it.

Assembly

step 1 - top a mound of corned beef with thousand island dressing

Divide corned beef into even piles; somewhat separating the slices so it’s not so packed down. Then spoon some homemade GFchow Thousand Island Dressing.

step 2 - add cole slaw

Next is cole slaw.

step 3 - add layer of cheese

The last ingredient is the cheese! I like swiss cheese and that’s what is traditionally used in a corned beef special.

Carefully take each “sandwich” and place it in the heated pan.

Use your favorite cheese if you don’t like Swiss.
Omit the butter or margarine if watching calories.
If you don’t follow a gluten free diet, bring out the rye bread, make your sandwich and grill (turning so that each half of the bread gets grilled).
Turkey, Roast Beef, or Pastrami can easily be substituted for Corned Beef.
