Satay Breakfast Toast-(Gluten Free)

Satay Breakfast Toast sounds strange–I know. But try it. I bet you’ll like it. Toast up your favorite gluten free bread, spread some peanut butter, sprinkle cilantro and scallions and finish with a drizzle of sriracha. Take a bite, close your eyes, and enjoy the great combo of flavors that are bursting in your mouth.

Organize the ingredients: Peanut Butter, torn or rough chopped Cilantro, sliced Scallions, Sriracha and toasted Gluten Free Bread.

My preference is Udi’s bread. This would also be good on rice cakes. If you’re not following a gluten free diet, toast up your favorite crusty bread. Slather the toast with the peanut butter and sprinkle on the fixings. Be careful…this toast can be addictive!

Ingredients

  • 2 pieces bread(Udi's is my preference) toasted
  • Scoop of peanut butter crunchy or creamy
  • 1 chopped scallion
  • 1 Tbsp cilantro chopped or torn
  • Drizzle of Sriracha

Instructions

  • Toast Bread.
  • While bread is toasting, slice scallions and chop/tear cilantro.
  • Once bread is toasted, spread peanut butter.
  • Sprinkle chopped scallions and cilantro on top.
  • Finish with a drizzle of sriracha.

Notes

Crushed peanuts can also be sprinkled on top of the toast.
To keep bread fresh, store it in the freezer and defrost pieces as you need them.  This ensures that you will always have fresh bread on hand and it only takes seconds to defrost bread in the microwave.
If not following a gluten free diet, feel free to use whatever delicious crusty bread you have.
This is an easy breakfast to eat on-the-go!
