Mexican-Style Street Corn
If you’ve never had Mexican-Style Street Corn, you’re in for a total treat. Before digging in, you’ll want to roll up your sleeves and have the napkins AND dental floss ready to go! The flavors of the charred corn combined with the mayo, cojita cheese, and lime will make your mouth water. Get ready to make many trips to the market (or farmer’s market) for fresh corn…Mexican-Style Street corn is that good!
Jump to RecipeFor this recipe you’ll want to buy fresh corn and remove the husks. Tip: It’s best to buy the corn the day you plan to eat it. Organize the fixins’: mayo, cojita cheese, lime, and chipotle chile spice (if using).
Spray pre-heated grill with non-stick oil. Place corn directly on the grill. Cook until all sides are charred. Cooking takes approximately 20 minutes.
Brush hot-off-the-grill corn with mayo and then sprinkle on cheese and chile powder. Finish with a squeeze of lime, some cilantro and serve.
Mexican-Style Street Corn
Ingredients
- Fresh ear of corn husk removed
- 2 teaspoons mayo
- 1 tablespoon Cojita cheese grated or crumbled, I buy mine at Whole Foods Market, parmesan can be used in place of Cojita
- pinch of chipotle chile spice I buy mine at Whole Foods Market. You can use plain chile powder or cayenne pepper if you can't find the chipotle chile (omit if you don't like spicy foods)
- squeeze of lime
- garnish with lime wedges and cilantro leaves if desired
Instructions
- Preheat grill to medium-high.
- Spray grill with non-stick oil. Place corn directly on the grill. Cook until all sides are charred (see recipe photo). Charring takes approximately 20 minutes.
- Brush hot-off-the-grill corn with mayo and then sprinkle on cheese and chile spice.
- Finish with a squeeze of lime, some cilantro leaves and serve.
