Brazilian Cheese Rolls with Herb Butter
If you are gluten free and want a fabulous roll, I highly recommend you try Brazilian Cheese Rolls. They are gluten free gems. Even better is Brazi Bites makes the rolls for you! Look for Brazi Bites in the freezer section at you local market. All you have to do is finish baking them and serve with herb butter…if you are so inclined!

Brazi Bites is a brand of Brazilian rolls that are sold at Whole Foods and occasionally at Costco in the freezer section. (They are probably sold elsewhere but this is where I’ve seen them.) Brazilian rolls are known as “cheese bread” and they contain no gluten. They are made with tapioca flour instead of wheat flour.
Line a tray with parchment paper (if using foil, spray with a non stick oil to prevent the rolls from sticking) and place frozen rolls in a single layer. Place tray on middle rack of oven and cook for 20 minutes in a pre-heated 400 degree oven, rotating tray after 10 minutes.
Herb Butter
Let butter come to room temperature. Rinse and pat dry thyme. Remove leaves from the stem and rough chop.
Using a fork, mash thyme and butter together. Put herb butter into a shallow, small-sized bowl. Use a knife to flatten the butter. Sprinkle sea salt on top of the butter and garnish as desired.

Serve rolls immediately when nice and hot. While the rolls are very tasty on their own, if you smear a little of the herb butter on, it amplifies their flavor and turns them into mini taste bombs!

Ingredients
Brazilian Cheese Rolls
- Bag of Brazi Bites
Herb Butter
- 2 Tbsps unsalted butter room temperature
- 2 Tsps. fresh thyme roughly chopped, add more or less to taste
- sprinkle with coarse sea salt optional
Instructions
Brazilian Cheese Rolls
- Follow instructions on the back of the bag.
- Preheat oven to 400 degrees on Bake setting.
- Do NOT thaw the rolls before cooking.
- Place as many rolls as you want in a single layer on a lined tray.
- Bake for 20 minutes, rotating tray after 10 minutes. Rolls should be golden brown.
Herb Butter
- Mash ingredients together with a fork and garnish with coarse sea salt, if desired.
To Serve
- Transfer rolls to a plate or tray, serve immediately with or without herb butter.
Notes
Brazi Bite rolls are store bought and found in the freezer section. The Herb Butter recipe was developed by me.
