Homemade Greek Dressing

To take your Greek salad to the next level you have to make your own dressing. Forget the bottled stuff. It just can’t compete with the freshness of homemade dressing that is missing from most Greek Salads.

Ingredients

  • 2 1/2 tablespoons red wine vinegar
  • 1 lemon zested and juiced
  • 1/2 clove garlic minced
  • 1 teaspoon dried oregano
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup olive oil extra virgin

Instructions

  • Place all the ingredients in a bowl or mason glass jar.
  • Stir or shake vigorously until emulsified, about 30 seconds.
  • Use immediately or refrigerate for 1-2 weeks, stirring or shaking to emulsify again before each use.

Notes

Once refrigerated, the olive oil in the dressing may thicken depending on the temperature of your refrigerator. If this happens, take dressing out of the refrigerator 30-45 minutes before using to let the oil get to room temperature. Always shake (or mix) before using.
