Greek Salad with Homemade Dressing
I always enjoy a good Greek Salad. The crunchy, crispy romaine with the salty olives and feta hits the spot. But what makes a Greek salad fabulous is the dressing. Forget the bottled stuff, you need to make your own and it’s really simple, but makes all the difference. Greek Salad with Homemade Dressing is very easy to make and really hits the spot!

The basic ingredients of a Greek salad are romaine lettuce, tomato, cucumber, kalamata olives, onion, feta cheese and oregano. To prep for the salad: Chop the romaine. Cut tomato into wedges. Slice the cucumber and onion. Halve most of the kalamata olives and leave some whole. Measure approximatly 1/2 cup of feta (my fav is Israeli feta) and crumble with your hands.
Homemade Greek Dressing
Once all of the prep work is completed for the salad, prepare the dressing. Combine ingredients together in a bowl or jar and vigorously shake or stir.

Randomly place the tomatoes, olives, onions and cucumbers over the lettuce. Crumble feta on top. Spoon or drizzle dressing over salad and season with salt, pepper and dried oregano.

Salad Ingredients
- 1 romaine lettuce heart chopped or 1/2 bag of pre-chopped romaine
- 1 whole tomato any variety and/or color cut into wedges (cherry tomatoes can also be used)
- 1 cucumber sliced, peeled or unpeeled
- 2 slices onion, red or white cut into thin rounds
- 1/4 cup kalamata olives halved
- 1/2 cup feta cheese preferably Israeli or French occasionally you can find the Israeli feta at Trader Joe’s
- kosher salt, pepper and dried oregano to taste
Dressing Ingredients
- 2 1/2 tablespoons red wine vinegar
- 1 lemon zested and juiced
- 1/2 clove garlic minced
- 1 teaspoon dried oregano
- 3/4 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup olive oil extra virgin

Salad Instructions
- Place the tomatoes, olives, onions and cucumbers on top of the lettuce in a medium sized bowl or platter. Then add crumbled feta.
- Drizzle with homemade Greek Salad dressing and season with salt, pepper and dried oregano.
Dressing Instructions
- Place all the dressing ingredients in a bowl or mason glass jar.
- Stir or shake vigorously until emulsified, about 30 seconds.
- Use immediately or refrigerate for 1-2 weeks, stirring or shaking to emulsify again before each use.

This has become a staple in my house. I make this salad at least 2 to 3 times per week. I always double the dressing and store in my fridge (so I can use for many, many salads). I could eat this salad every day and not get bored…light, refreshing and delicious!
