Blistered Green Beans

Blistered Green Beans

Simple, quick and extremely tasty. It doesn’t get better than that!

Blistering the Beans

Place beans in a very hot pan and leave the beans undisturbed for 3 minutes.

Heat the olive oil over medium high heat and add the beans once the oil is hot.

Using tongs toss the beans and continue cooking for another 3-4 minutes until browned and blistered all over.

The trick to this dish is to be patient and leave the beans undisturbed to get browned and blistered on one side, approx 3 minutes. Toss and continue to cook for another 3-4 minutes, until beans are browned and blistered all over. Once beans are done, season with salt, pepper and garlic powder.

Ingredients

  • 1 tablespoon olive oil
  • 1 lb. haricots verts beans washed, trimmed, and dried
  • season with kosher salt, pepper, and garlic powder

Instructions

  • Heat olive oil in a large pan over high heat until oil is almost smoking.
  • Once oil is heated, add the beans in a single layer. You may need to cook the beans in two batches.
  • Leave beans undisturbed until browned and blistered, approx 3 minutes.
  • Then toss with tongs and continue cooking for another 3-4 minutes until beans are browned and blistered all over.
  • Season with salt, pepper and garlic powder and serve immediately or at room temperature.

Notes

I like the thin string beans best. They’re called haricots verts and available at most markets including Trader Joe’s and Costco. I like the ones from Trader Joe’s because they are pre-washed and trimmed.
If using regular beans, the cook time will be longer.
If making a large quantity of beans, you will need to cook them in batches because you don’t want to overcrowd the pan. For each batch, add more oil to the pan and season once the beans are cooked through.
In order to blister the green beans the heat needs to be high, which may cause splattering.
