Sautéed Mushroom Medley

When I find interesting mushrooms at the market, I buy them and figure out later how I’m going to use them. I was at the Korean Market and saw Baby King Oyster mushrooms which I don’t often see. I bought those, Beech Mushrooms and Shiitakes. I decided to do a simple saute and they were fabulous tasting and simple to make.

Once olive oil is heated, add shallots and garlic to the pan for 1 minute. While oil is heating up, slice mushrooms.

Add sliced mushrooms to the pan and saute for approx. 5 minutes. Add white wine to the mushrooms and cook until almost evaporated, approx. 2-3 minutes.

Season with kosher salt and black pepper and serve immediately.

Ingredients

  • 1-2 Tbsps Olive Oil
  • 2 cloves of Garlic minced
  • 1 Shallot sliced
  • Assortment of Mushrooms Beech, Shiitake, Baby King Oyster or any other type you like
  • 1/4-1/3 Cup White Wine
  • Kosher Salt and Pepper to taste

Instructions

  • Mince garlic.
  • Slice shallot.
  • Heat up oil on medium high.
  • While oil is heating, rinse and pat dry mushrooms and then slice.
  • For Shiitakes, remove the stems after cleaning and then slice.
  • For Baby King Oysters, no trimming is necessary. Just cut in half lengthwise or keep whole.
  • For Beech, cut off bottom area that attaches the mushrooms together. No slicing necessary. Just gently pull the individual mushrooms apart.
  • Once oil is hot, add garlic and shallots to the pan.
  • Cook for 1 minute until fragrant.
  • Add the assorted mushrooms and cook for approx. 5 minutes, until mushrooms begin to turn color slightly.
  • Then add wine to the pan and let it reduce for an additional 2-3 minutes.
  • When mushrooms are cooked, season with salt and pepper and serve.

Notes

Use your favorite mushrooms or just one variety.  
If you don’t have wine, add some gluten free soup.
Add your favorite herb for an additional flavor boost.
