Forget about buying Egg Salad at the market. There’s no need with this quick, easy and delicious recipe for Old-Fashioned Egg Salad. Start with Perfectly Cooked Hard Boiled Eggs and go from there. After peeling the eggs, you will have a delicious meal ready in about 5 minutes.

Boil Eggs

Boil eggs using the GFchow’s Perfectly Cooked Hard Boiled Egg recipe.

Peel & Halve Eggs Vertically

Peel eggs under cold water and cut each egg in half to make the mashing easier.

Mash Eggs with a Fork

Using a fork, mash the eggs to the consistency you like.

mix in mayo and mustard to mashed eggs

Add mayonnaise and dijon mustard (optional) to the mashed eggs. Season with salt and pepper. Mix thoroughly.

Serve egg salad in a lettuce bowl and garnish with your favorites.

Ingredients

  • 5-6 large eggs hard-boiled
  • 2-3 tablespoons mayonnaise more or less according to taste
  • 1-2 teaspoons dijon mustard
  • kosher salt and pepper to taste
  • garnish with tomatoes, onions, chives, dill, capers, etc optional

Instructions

Perfectly Cooked Hard-Boiled Eggs

  • Gently place eggs in a single layer in a pot of cold tap water, enough to cover the eggs.
  • Bring water to a boil and then turn down flame to a simmer.
  • Simmer for 12 minutes.
  • Then remove the pan from the burner and let sit for an additional five minutes.
  • Next, spill out the hot water and run cold water over the eggs for 1-2 minutes to cool them down.
  • Peel Perfectly Cooked Hard-Boiled Eggs.

Old-Fashioned Egg Salad

  • Mash eggs with a fork to the consistency you prefer. Or place the eggs into a food processor.
  • Mix in mayonnaise, mustard, salt and pepper to taste.
  • Garnish and serve.

Notes

Eggs can be stored in the refrigerator (either peeled or unpeeled) in a bowl or baggie until ready to use.
Many different garnishes can be added.  Choose your favorites.
