Chicken Skewers with Spicy Satay Sauce
When I invite friends over to watch an NFL playoff football game, I want the food to be awesome but I don’t want to be in the kitchen cooking while the game is on. I discovered these chicken skewers at Costco. They are moist, pre-cooked, gluten free and seasoned really well. I made a simple, homemade spicy satay sauce ahead of time that paired perfectly with the skewers. It’s a great dish for adults, kids, and sports fans everywhere!
The pre-cooked skewers are from WestEnd Cuisine. I bought them from Costco and will definitely buy them again.
I thought the skewers would pair nicely with an asian dipping sauce and found this tasty, spicy dipping sauce recipe online. All of my taste-testers and I agreed the sauce with the skewers was a winner!
Simply heat the skewers for 10-12 minutes. Serve them on a platter with the Spicy Satay Sauce or with your favorite dipping sauce.
Chicken Skewers with Spicy Satay Sauce
Ingredients
- Chicken Skewers from Costco
- 1/2 Cup peanut butter
- 3 Tbsp. rice vinegar
- 2 Tbsp. soy sauce or tamari
- 2 Tbsp. Asian sesame oil
- 2 Tbsp. fresh lime juice
- 1 Tbsp. granulated sugar
- 1 Tbsp. Sriracha; more to taste
- 2 medium cloves garlic crushed
- 1 1- inch piece fresh ginger peeled and grated
- 1/4 Cup Water
- Sesame seeds for garnish, optional
Instructions
- Heat chicken skewers per package directions, 10-12 minutes in the oven.
- Mix the peanut butter, vinegar, soy sauce, oil, lime juice, sugar, Sriracha, garlic, ginger, and 1/4 cup water in a bowl until smooth and incorporated.
- Season to taste with more Sriracha.
- Garnish with sesame seeds, optional.

I served over angel hair pasta for an excellent and easy dinner. Grilled chicken tenders in olive oil and garlic and perfectly good for the flavorful sauce. Winning recipe!
