Heat chicken skewers per package directions, 10-12 minutes in the oven.
Mix the peanut butter, vinegar, soy sauce, oil, lime juice, sugar, Sriracha, garlic, ginger, and 1/4 cup water in a bowl until smooth and incorporated.
Season to taste with more Sriracha.
Garnish with sesame seeds, optional.

Increase or decrease Sriracha to spice level desired.Satay sauce can be stored in the refrigerator for up to 2 weeks.Thin with additional water or lime juice if the sauce thickens in the fridge.
