Chicken Skewers with Spicy Satay Sauce

Ingredients

  • Chicken Skewers from Costco
  • 1/2 Cup peanut butter
  • 3 Tbsp. rice vinegar
  • 2 Tbsp. soy sauce or tamari
  • 2 Tbsp. Asian sesame oil
  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. granulated sugar
  • 1 Tbsp. Sriracha; more to taste
  • 2 medium cloves garlic crushed
  • 1 1- inch piece fresh ginger peeled and grated
  • 1/4 Cup Water
  • Sesame seeds for garnish, optional

Instructions

  • Heat chicken skewers per package directions, 10-12 minutes in the oven.
  • Mix the peanut butter, vinegar, soy sauce, oil, lime juice, sugar, Sriracha, garlic, ginger, and 1/4 cup water in a bowl until smooth and incorporated.
  • Season to taste with more Sriracha.
  • Garnish with sesame seeds, optional.

Notes

Increase or decrease Sriracha to spice level desired.
Satay sauce can be stored in the refrigerator for up to 2 weeks.
Thin with additional water or lime juice if the sauce thickens in the fridge.
