Arugula with Apples, Goat Cheese Crumbles, and (GF) Granola
Arugula Salad with Apples, Goat Cheese Crumbles, and Gluten Free Granola is a riff on the original salad my stepdaughter, Amelia, and sister-in-law Meg created one summer. The pairing of fruit with arugula, goat cheese, and granola is dyn-o-mite and I’ve been making this salad ever since. As the seasons change, so does my fruit selection.

I love the peppery taste of arugula combined with fruit. It seems like a great pairing to me. For this salad, use organic arugula and some thinly sliced apples with the skin removed.
Next add some thinly sliced red onion. I love onion in all of my salads but if you don’t, omit it.
Next up is the sprinkling of goat cheese and seasoning. I used goat cheese here but have also substituted feta and blue cheese at times. Each cheese adds its unique flavor to the salad.
Dress the salad with flavored strawberry vinegar and lemon oil to amp up the fruitiness. If you don’t have flavored vinegar and oil use my Classic Balsamic Vinaigrette. The salad will still be fantastic. Before serving, sprinkle a handful of store-bought or homemade gluten free granola over the salad.

Arugula Salad with Apples, Goat Cheese Crumbles and Homemade Granola
Ingredients
Salad
- 1/2 bag arugula preferably organic
- 1/2 Honeycrisp apple (or your favorite apple variety) skin removed & sliced thin
- 2-3 tablespoons crumbled goat cheese feta or blue can also be used
- red onion a few thin slices
- handful of homemade granola recipe located in the gfchow.com Breakfast tab
Dressing
- Drizzle even parts Strawberry Vinegar and Lemon Olive Oil onto salad. any fruit vinegar would be delicious
- Season with kosher salt, freshly ground pepper and garlic powder. to taste
Instructions
- Put arugula in a big bowl, or plate separately.
- Add sliced apples, crumbled cheese and onion slices.
- Drizzle dressing on top.
- Then sprinkle a handful of homemade (GF) granola to complete the salad.
