Ingredients
Salad
1/2bagarugula preferably organic
1/2Honeycrisp apple (or your favorite apple variety)skin removed & sliced thin
2-3tablespoonscrumbled goat cheesefeta or blue can also be used
red oniona few thin slices
handful of homemade granolarecipe located in the gfchow.com Breakfast tab
Dressing
Drizzle even parts Strawberry Vinegar and Lemon Olive Oil onto salad.any fruit vinegar would be delicious
Season with kosher salt, freshly ground pepper and garlic powder.to taste
Instructions
Put arugula in a big bowl, or plate separately.
Add sliced apples, crumbled cheese and onion slices.
Drizzle dressing on top.
Then sprinkle a handful of homemade (GF) granola to complete the salad.
Notes
Any fruit can be substituted for the apples. Use what's in season or whatever is your favorite.Same goes for the cheese. Use your favorite.Keep cheese refrigerated until ready to use to make it easier to crumble.If you don't have flavored vinegars and oils on hand, use my Classic Balsamic Vinaigrette. It goes perfectly with this salad too.Homemade Gluten Free Granola recipe. If you're not gluten free, use your favorite brand of granola.Toasted nuts are a good substitution for the granola.
