Soy-Glazed Eggplant Wedges are the kind of simple, satisfying dish you’ll want on repeat. The eggplant is melt-in-your-mouth tender, soaking up a glossy soy glaze that’s both savory and subtly sweet. I love hoisin sauce and San-J’s gluten free hoisin is totally respectable. For those of you who aren’t fans of mushrooms, I urge you to give this a try. These rolls are fire!
I love the flavors of garlic, lemon, white wine and butter with fresh herbs sprinkled in. These are classic Italian “scampi” ingredients. Here I’m using the word “scampi” loosely because there’s no shrimp or seafood in this recipe, instead I’m using meaty mushrooms for a vegetarian twist on the concept. Scampi-Style Sautéed Mushrooms is a great vegetarian alternative to the scampi we all know and love.

Let’s dig into some Japchae, a popular Korean noodle dish. Japchae is a combination of sweet potato vermicelli noodles (more on that in a moment), veggies, and beef in a wonderful umami sauce but in this recipe I’ve kept it veggies the whole way. The sweet potato vermicelli noodles have a density and sweetness to them that is quite different from traditional rice vermicelli noodles. And I love the punch the sesame oil brings to the dish. So whether you’re twirling the noodles with a fork or slurping them down with chopsticks, Veggie Japchae (Korean Noodles) – Gluten Free is easy to make and even more fun to eat.
Think of General Tso’s Chicken, then swap out chicken for cauliflower, and voila, Saucy Crunchy Cauliflower Florets is born! Tons of crunch with crispy gluten free panko crumbs on the outside with soft cauliflower florets on the inside all coated with an incredible sauce that clings so perfectly to the florets. All this without the mess or extra calories from deep frying. As my daughter says…total 12 out of 10!

I love the flavors, textures and colors in this recipe but it’s the pan searing of the beets that differentiates this beet recipe from most others. I’m going to level with you…peeling all of these garlic cloves was a pain BUT I discovered that many markets sell peeled garlic cloves. YES🙏🏻 to small conveniences. Less time prepping and more time enjoying!
