Crispy Olive Oil-Baked Potatoes
My family loves baked potatoes. Since I don’t make them often, everyone gets very excited when they are on the menu. The skin on these Crisp Olive Oil-Baked Potatoes crackles with flavor while the inside is piping hot and smooth. Put them in the oven for 1 hour and then serve with your favorite toppings.
Wash the potatoes with a damp paper towel to remove any dirt. Let air dry for a few seconds and then pierce them with a fork a couple of times. Drizzle olive oil, sprinkle kosher salt and pepper and roll the potatoes around to get all of the spices on them. Put them in the oven, directly on the rack with a foil-lined tray underneath them and move on to your next activity.
After 1 hour give the potatoes a gentle squeeze to see if they are soft and finished cooking. If the potatoes aren’t soft bake them for an additional 15 minutes and re-test. Once soft and cooked through, remove from the oven.
Season the potatoes and serve immediately with your favorite toppings. Don’t forget to eat the skin on these babies. It’s delicious!
Crispy Olive Oil Baked Potatoes
Ingredients
- Yukon Gold, Russet or Baking Potatoes large
- Olive oil
- Kosher salt and freshly ground pepper
Instructions
- Preheat oven to 425 degrees.
- Wash potatoes with a damp towel. Let air dry for a few seconds.
- The potatoe skins will crisp better if you do NOT pierce the potatoes.
- Rub olive oil, kosher salt and pepper over the potatoes, enough to generously coat them.
- Put potatoes directly on the middle rack and bake on the top oven rack at 425 degrees (put a baking sheet below to catch drippings) until soft, approx. 60 minutes. Cook for an additional 15 minutes if potatoes are still firm to the touch.
- Slice open and serve with your favorite toppings.
