Crispy Olive Oil Baked Potatoes

- Yukon Gold, Russet or Baking Potatoes large
- Olive oil
- Kosher salt and freshly ground pepper
Preheat oven to 425 degrees.
Wash potatoes with a damp towel. Let air dry for a few seconds.
The potatoe skins will crisp better if you do NOT pierce the potatoes.
Rub olive oil, kosher salt and pepper over the potatoes, enough to generously coat them.
Put potatoes directly on the middle rack and bake on the top oven rack at 425 degrees (put a baking sheet below to catch drippings) until soft, approx. 60 minutes. Cook for an additional 15 minutes if potatoes are still firm to the touch.
Slice open and serve with your favorite toppings.
Make sure to pick potatoes that have no bruises and are firm to the touch.
Try to pick the same size potatoes for even cooking. The cooking time is based on large sized potatoes.
The recipe is the same whether baking 1 or 5 potatoes.
Add garlic powder or minced/crushed fresh garlic to the outside seasoning rub for extra flavor.
This recipe is "no-fuss." Once in the oven, the potatoes need no attention.
