Grilled Radicchio with Honeyed Almonds, Balsamic, and Parmesan
Grilled Radicchio with Honeyed Almonds, Balsamic, and Parmesan is typical of Italian cooking…using a few simple quality ingredients with the focus on flavor. Radicchio is gorgeous with its vibrant purples, pinks, and whites and while radicchio is the star in this recipe it has a stellar supporting cast of honeyed almonds, balsamic syrup and parmesan.

Organize all of the ingredients for the recipe – one head of radicchio, sliced almonds, honey, balsamic syrup (glaze), and parmesan.
Cutting Radicchio into Wedges
Slice radicchio into four wedges (leaving the core intact). Brush the cut side of the wedges with olive oil, season with salt and pepper.
Grilling Radicchio
Heat the grill to medium-high and place radicchio wedges cut-side down, 1-2 minutes per side until edges are browned. Transfer to a platter and allow to cool.
Making Honeyed Almonds
Toast almonds in a 350 degree oven on a parchment-lined (or foil sprayed with a non-stick oil) tray for 5-6 minutes until fragrant and toasted. Then drizzle honey onto almonds and cook for an additional 2-3 minutes. Let cool.
Grilled Radicchio with Honeyed Almonds, Balsamic, and Parmesan
Before serving, scatter honeyed almonds on top and then drizzle on balsamic syrup. Finish with parmesan cheese and serve.

Ingredients
- 1 radicchio large, vibrant purple, & firm/heavy
- olive oil for grilling radicchio
- sea salt and freshly ground black pepper to season radicchio
- 1/4 cup raw almond slices
- 1 tablespoon honey your favorite kind
- balsamic syrup (also known as Glaze or Blaze) in a bottle from your grocery store, I use Trader Joe’s brand or make your own*
- 1-2 tablespoons parmesan cheese freshly grated with a zester or pre-grated
Instructions
Radicchio
- Remove any wilted/damaged outer leaves. Slice radicchio into four wedges (leaving the core intact). Brush cut sides of the wedges with olive oil, season with salt and pepper. Heat the grill to medium-high and place radicchio wedges cut-side down, 1-2 minutes per side until edges are browned. Transfer to a platter and allow to cool.
Honeyed Almonds
