Flavor Poppin’ Roasted Broccoli and Red Onions
Hot Damn! Flavor Poppin’ Roasted Broccoli with Red Onions is just about the best broccoli recipe I’ve ever made. And the secret ingredient is anchovies…shh! They’re a total game-changer. So if you’ve never had anchovies or think you don’t like them, I strongly urge you to try this recipe anyway. They add tons of umami richness and, quite simply, put this dish into “most-favored” status.

Organize and prep recipe ingredients.
Anchovy, Garlic Oil
Heat oil in a large heatproof skillet over medium-high until shimmering. Add anchovies and garlic. Mix until anchovies are softened and breaking apart.
Broccoli and Onions w Anchovy, Garlic Oil
Then add onions and broccoli to the pan. Give a good mix and place skillet in oven to roast for 20-25 minutes, until tender and browned. Season with salt to taste.
Flavor Poppin’ Roasted Broccoli and Red Onion
Transfer to a platter and scatter parmesan over hot broccoli, if desired. Garnish with lemon wedges and serve.
Flavor Poppin’ Roasted Broccoli and Red Onions
Ingredients
- 1 head broccoli about 1 large or 2 medium heads
- 5 tablespoons extra-virgin olive oil
- kosher salt to taste
- 1 small red onion cut in half lengthwise, then cut into ½"-thick slices
- 4 garlic cloves sliced
- 6 oil-packed anchovy fillets
- 1-2 tablespoons parmesan finely grated, optional
- lemon wedges as garnish
Instructions
- Preheat oven to 400° on the Roast setting. If your oven doesn't have Roast, use the Bake setting.
- Wash and dry broccoli head. Pat dry with a paper towel. Cut or break into florets keeping more of the stem attached than you normally would.
- Heat oil in a large heatproof skillet over medium-high until shimmering.
- Add anchovies and garlic. Mix until anchovies are softened and breaking apart. Then add onions and broccoli and give a good mix.
- Place skillet in oven to roast for 20-25 minutes, until tender and browned. Season with salt to taste.
- Transfer to a platter and scatter parmesan over hot broccoli. Garnish with lemon wedges.
