Spatchcocked Lemon Rosemary Chicken
Spatchcocked Lemon Rosemary Chicken sounds like a fancy dish but this one I buy from Trader Joe’s in the refrigerated section where they sell other chicken products. Spatchcocked Lemon Rosemary Chicken is a great, simple weekday dinner dish. The chicken is pre-marinated and oven-ready. As the chicken cooks the skin gets deliciously crispy and the meat is infused with a wonderful lemony flavor. Weekday cooking doesn’t get easier than this!
Pre-made, Pre-packaged Spatchcocked Lemon Rosemary Chicken
I have cooked this chicken in the oven and on the bbq. Both ways result in crispy skin with moist, tender meat. Be sure to eat the lemons too. They are delicious once they are cooked and bring just the right tang.

Spatchcocked Lemon Rosemary Chicken
Ingredients
- 1 Spatchcocked chicken from Trader Joe's
Instructions
- Pre heat oven to 375 degrees.
- Use the Roast setting if you have it, otherwise use Bake.
- Trim any excess fat.
- Line baking pan with foil or parchment and place chicken skin side up.
- Roast or Bake for 75 minutes.
- Serve on a platter and garnish as desired.

I had this for the first time tonight, and while it was delicious, I felt bloated and icky after eating it. After some research, I found the ingredients on the Trader Joe’s website and discovered that maltodextrin is used as a flavoring, which can cause issues for someone suffering from celiac disease. The maltodextrin is not listed on the ingredient label, but it is mentioned on the Trader Joe’s website.
That is great information and thanks for sharing. I have never had any type of reaction after eating the spatchcocked chicken and I feel badly that you didn’t feel well. It’s also extremely frustrating when you have to dig so deep to research ingredients. I hope you are able to enjoy the many other recipes I have on the GFchow website…without suffering any stomach issues.
