Spatchcocked Lemon Rosemary Chicken

Ingredients

  • 1 Spatchcocked chicken from Trader Joe's

Instructions

  • Pre heat oven to 375 degrees.
  • Use the Roast setting if you have it, otherwise use Bake.
  • Trim any excess fat.
  • Line baking pan with foil or parchment and place chicken skin side up.
  • Roast or Bake for 75 minutes.
  • Serve on a platter and garnish as desired.

Notes

Prepare this chicken either in the oven or on the bbq, either way produces great results.
Check to see if any fat needs to be trimmed before cooking.
Add more lemon slices and rosemary to amplify the flavors if desired.
When working with raw chicken always use a separate cutting board and be sure to wash it and the counter thoroughly.  I have a dedicated cutting board for chicken.
