1/2ripe avocadosliced or mashed, seasoned with kosher salt and pepper
1-2fried eggsseasoned with kosher salt and pepper
1-3slicessmoked salmon, lox or gravlax
small handful of alfalfa sprouts
extra virgin olive oil for drizzling
Instructions
This is a very loose recipe. Use the ingredients above as suggestions only. For instance if your prefer scrambled or hard boiled eggs instead of fried eggs, go with your preference. Or if you’re not an egg fan, omit the eggs completely. Personally I think a runny yolk makes everything taste better.
Assembly:
Place lettuce on the toasted gluten free bread. Then add the avocado slices, smoked salmon, fried egg(s), and alfalfa sprouts. Drizzle with some olive oil and season with kosher salt and pepper. Garnish as desired and serve immediately!
